For our new Catch of the Day, Chef Seamus, has gone to the dark side with his SALT ISLAND MUSSELS FRA DIAVOLO.
In typical Italian style, the name which means “Brother Devil”, tells you exactly what to expect: fiery, spicy, bold…and red! The tomato based sauce simmers in a pan with roasted Serrano peppers providing some intense (but not offensive) heat. The fresh Salt Island mussels are then added to the sauce cooking in the juices until their shells crack open signifying they’re ready to be devoured. The brininess of the Salt Island mussels perfectly infuses the silky spicy tomato sauce with a rich flavor of the sea. The mussels themselves are tender and plump.
